How to Blind Bake a Pie Crust

Blind baking, also known as pre-baking, is essential for baking pumpkin pies, pecan pies, and other popular pie recipes. We'll show you how to master this essential technique.

I'm Kelly Senyei with epicurious.com

and this is how to blind bake a pie crust.

Start with your chilled dough inside the pie plate.

Use a fork to poke a couple of holes

in the bottom of the crust.

This way, some steam can release and it won't puff up.

Then we're gonna add a piece of foil over the crust.

Grease the dull side with butter.

And this way it won't stick to the dough.

We're gonna fill it with pie weights.

If you don't have pie weights,

you can use dried beans or uncooked rice.

Anything that's gonna weight down the foil.

And then you want to make sure

that you evenly distribute the weights into all the corners.

Put your pie in the oven at 425 degrees Fahrenheit

for about eight to 10 minutes.

And the result is a perfectly golden brown crust

like this one.

when you're using a filling that's a little bit more wet,

such as a pumpkin pie or a pecan pie.
