How to Cook Fish Without a Recipe

Are you scared of cooking fish? Don't be.
(upbeat music)
I don't know why but some people are scared of cooking fish.
Maybe they're grossed out by it,
maybe they're worried it's going to make their house smell
but fish is one of the fastest, easiest cooking proteins
you can turn into dinner.
It's healthy and delicious
and you don't even need a recipe to make it.
Today I'm going to be showing you one
of my favorite spring time dinners
which is to cook some wild sockeye salmon
with asparagus and potatoes on a sheet pan.
Only takes ten minutes in the oven and it's really good.
Just line your pieces up on a sheet tray.
You need about six ounces per person.
You can get sick on or skin off depending
on what you like.
So I'm just going to put a little olive oil all around.
That way you don't pick up with a massive fish skin stuck
to your sheet pan.
And you need to season the fish before you cook it.
I need to prepare the sides.
You can use any kind of vegetable you want
or any kind of leftover cooked root vegetable.
It needs to be able to cook in about ten minutes.
These potatoes are already cooked.
So I'm going to slice them so they have more surface area
to get crispy.
And then I just want to toss this in a little oil
before I put it on the sheet pan.
And a little salt and some pepper
and then I'm also going to add some lemon zest.
Make it nice and springy and bright.
I'm putting the potatoes down on the cut side
so that they get nice and crispy.
Now I'm going to add some thyme for making it pretty
but also for making it taste better.
It's really easy to overcook fish
but putting mayonnaise on top of the fish keeps it nice
and moist and it also infuses it with extra flavor
especially if you stir flavorings into your mayonnaise.
You want about a tablespoon of mayonnaise per fish filet.
Mayonnaise also acts as a glue for a crunchy topping
which is the best part.
I'm using sliced almonds today
but you could use crumbled potato chips or tortilla chips
or bread crumbs.
So my oven is at 500 degrees.
This is going to take about ten minutes
but you should start checking at eight minutes
because sometimes it can take faster.
There we go, that looks good.
So how do you know when your fish is actually done?
Well, you just have to poke it.
Just poke there in the middle of the filet
and if you feel the layers of flesh separating easily
when you push it that means it's done.
So here we go your complete dinner
all in one fish and your sides and that's all you need
and it only took ten minutes.

So that's how I make a fish dinner in ten minutes.
