Ingredients
Step 1
1. Place the puree in the bottom of a champagne glass.
Step 2
2. Carefully pour in the sparkling wine.
Step 3
3. Don't stir, but use a spoon to pull the puree up along thesides of the glass, so that you won't lose the bubbles.
Step 4
4. Decorate with the lavender.
If you are having a hard time finding peach puree, you can also use high quality peach juice or another fruit puree. A classic Bellini has peach liquor as a top layer.

Back to TopI too have used the Looza peach nectar because i could not find puree nor had the time to make my own. it was delicious anyway. Next time I make this i want to try it as the recipe states with the puree...definately do not skip on the lavender but use it sparingly or your cocktail will end up smelling and tasting like soap.

excellent! We have made this with Looza peach puree and homemade peach puree; both with fantastic results. Don't skip the Lavender!
