1999: Daniel Boulud
Bouludworked with some of France's brightest culinary stars (Georges Blanc, Roger Vergé, Michel Guérard) before moving to Washington, D.C., and then New York, where he ran storied high-society eatery Le Cirque from 1986 until shortly before he opened his namesake restaurant seven years later. In December 1998, Boulud relocated to the former Le Cirque space, where his subtly updated versions of fine French dishes, served in one of the city's most luxurious rooms, cemented his position in the international culinary firmament.
