Herbed Goat Cheese Toasts

Ingredients

Makes 2 servings

1 small garlic clove
1/8 teaspoon salt, or to taste
1/2 teaspoon minced fresh rosemary leaves
1/2 cup soft mild goat cheese
1 1/2 tablespoons extra-virgin olive oil
freshly ground black pepper to taste
2 slices country-style bread (about 6 1/2 by 3 inches each)
  1. Mince garlic and mash to a paste with salt. In a small bowl stir together garlic paste, salt, rosemary, goat cheese, olive oil, and pepper. Toast bread and cut each slice into 4 pieces. Spread herbed goat cheese on toasts.

  • Very good and easy, but be frugal with the salt- the cheese itself is already very salty.

  • Very delicious and easy to whip up in a hurry. It was a hit with everyone, and even some of my less "cheese-cultured" family members enjoyed.The fresh rosemary and garlic are just the trick!
