Epi's Newest Recipes: Power Breakfast Edition

Should you eat breakfast? These recipes definitely point to "yes."

Experts disagree about the power of breakfast. Many insist it's a good idea to eat it,whether you're hungry or not. Other studies suggest thatall that breakfast talk is just fried baloney. (With eggs. And hot sauce. On a roll.)

Food writers take a different angle: Breakfast is another opportunity to shove something delicious into one's mouth. Why waste it?

Of course, there is something to be said for holding back. At least Monday through Friday. So for a weekday breakfast that beats corn flakes but isn't the equivalent offrostedflakes, there's green shakshuka, packed with enough spinach to power you to straight to dinner.

Or, if you want something sweeter, there's this easily-portable bar. Whole wheat, oats, dates, and coconut—lots and lots of coconut—come together for this breakfast, which is deceptively nutritious and will probably be the envy of the school bus. (Or the city bus. Or the subway. Or your spouse.)

Speaking of deceptively nutritious...well, that may be going a step too far when describing this breakfast quick bread. But with only 1/4 cup of sugar and a helping of whole wheat, this is a breakfast that is probably not as bad for you as it looks. Or tastes.
