Savory Mains in Less than 45 Minutes

It’s all about the umami, dearest.

Looking forward to all the savory flavors that are going to be on your Thanksgiving table? You're not alone. But if you're thinking ahead, you might even becookingahead. Either way, with the holiday only days away, you probably don't have time be cooking big, time-consuming dinners.

So here are five dinners that pack as much savory flavor as Thanksgiving—in 45 minutes or less.

Monday: Wild Mushroom Pasta

This #MeatlessMonday pasta dish uses both dried mushrooms and an assortment of fresh. Use the time that the dried porcinis are soaking to prep everything else.

Tuesday: Tarragon and Lemon Roast Chicken

This quick roast chicken marries sweet tarragon and cooked fennel with punchy lemon juice, giving you hours of flavor in just 25 minutes.

Wednesday: Soba and Soy Broth

This udon and mushroom soup is a healthy riff on ramen, with plenty of radish and scallion slices for brightness. If you can’t find maitake mushrooms, don’t fret: sliced shiitake also works.

Thursday: Posole

Slow-simmering enriches flavor and tempers raw spice, but it takes forever—right? Not quite. Using leftover chicken from Tuesday's roast saves some time, and using a DIY chili paste is a quick way to add rich flavor.

Friday: Baked Eggs

There’s something very comforting about baked eggs after a busy day. But do you know what makes them even more comforting? When you pair them with a glass of red wine.
