Dark Chocolate Pudding with Pretzels

More proof that salt makes any dessert taste better—we'd even top these puddings with crushed potato chips.

Ingredients

Makes 6 servings

1 cup sugar
2 tablespoons cornstarch
2 tablespoons unsweetened cocoa powder, preferably Dutch-process
1/4 teaspoon kosher salt
4 large egg yolks
2 cups whole milk
1 cup heavy cream
1/2 vanilla bean, split lengthwise
6 ounces bittersweet chocolate, melted, slightly cooled
1 tablespoon unsalted butter
1 teaspoon vanilla extract
Whipped cream and chopped pretzels (for serving)
  1. Step 1

    Whisk sugar, cornstarch, cocoa powder, and salt in a medium saucepan. Whisk egg yolks, milk, and cream in a large bowl; scrape in vanilla seeds and add pod. Gradually whisk milk mixture into dry ingredients, whisking until smooth.

    Step 2

    Bring mixture to boil over medium-high heat, whisking constantly. Reduce heat to medium and continue cooking, whisking, until mixture is thick enough to coat a spoon, about 4 minutes. Remove from heat and whisk in chocolate, butter, and vanilla extract (mixture will thicken). Strain through a fine-mesh sieve into another large bowl.

    Step 3

    Divide pudding among small jars or bowls. Press plastic wrap directly onto surface of pudding; chill at least 4 hours.

    Step 4

    Top pudding with whipped cream and pretzels just before serving.

    Step 5

    DO AHEAD:Pudding can be made 3 days ahead. Keep chilled.

  • I made this for the first time this weekend and served it with pretzels, caramel sauce and sweetened whipped cream. It was delicious! The sauce thickened much more quickly than indicated in the recipe.

  • Yummy! If you whisk constantly, there really is no need to strain. Also, no need to melt the chocolate separately. Just chop coarsely and add to pudding mixture once you remove the pan from the heat - it will melt nicely. No point in getting more utensils/pans dirty than necessary.

  • I was a little afraid to try this because I'm not much of a chef, but it turned out really well! I made it as a fun dessert on Valentine's day, and couldn't believe how good it was.

  • This recipe came together exactly as the recipe states. Very rich taste and the whole family loved it. I may try tweaking it to decrease the fat so us grownups won't have as much guilt...
