Ingredients
Serves 6 to 8
Step 1
Heat a grill for medium-high indirect cooking. Brush the block of feta with 2 tablespoons of the olive oil and season well with kosher salt. Put the block of feta directly on the grill grates over direct heat and cook until lightly browned, about 2 minutes. Remove the feta—a fish spatula is best for this.
Step 2
Crumble the grilled feta, reserving a few tablespoons for garnishing, and add to a food processor along with the yogurt, mayonnaise, garlic, zest and juice of the lemon, and a heavy pinch of kosher salt. Blend until smooth and doubled in volume, about 5 minutes total.
Step 3
Move the feta dip to a serving bowl and drizzle with the remaining 2 tablespoons of olive oil and the reserved feta. Serve with pita bread and vegetables for dipping.
