Sweet Potato Casserole

I particularly like this sweet potato casserole because it isn't candy-sweet—no marshmallows, no canned crushed pineapple, no honey, and not very much sugar. I don't boil the sweet potatoes before I mash them; I bake them so they're less watery and have better flavor. Here's how: Pierce each sweet potato with a sharp-pronged kitchen fork, set on a baking sheet, then bake on the middle oven shelf for about 1 hour at 400° F. or until you can pierce a potato easily with a fork. Cool the potatoes to room temperature, peel, then mash until light and fluffy.

Ingredients

Makes 6 to 8 servings

3 cups firmly packed unseasoned mashed sweet potatoes (about 3 pounds) (see headnote)
1/2 cup firmly packed light brown sugar
1/2 cup fresh orange juice
4 tablespoons (1/2 stick) butter, melted
2 tablespoons fresh lemon juice
2 teaspoons finely grated orange zest
1/2 teaspoon freshly grated nutmeg or 1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
  1. Step 1

    1. Preheat the oven to 350° F. Butter a 2-quart casserole and set aside.

    Step 2

    3. Scoop into the casserole, spreading to the edge and roughing the surface. Bake uncovered on the middle oven shelf for about 45 minutes or until tipped with brown.

    4. Serve hot as an accompaniment to roast turkey, chicken, or pork. Good, too, with pork chops.

  • I think the taste was quite good but I didn't put in the zest. It was quite sweet already. Be careful with the lemon juice though for it might get a bit of a carroty taste.

  • At last---a sweet potato casserole not masked with candy topping. I've been making it for years, and I always get a request for the recipe. It's very good with white sweet potatoes, too.

  • This was awful. Sorry to disagree with so many. It tasted strongly of oranges, not sweet potatoes...and i only used 1 tsp. of zest. Other than that, I followed the recipe exactly. Perhaps I shouldnt have used oj from a carton, but it wasnt from concentrate. Whatever, I thew it away, and nobody liked it. Sticking with plain sweet potatoes next time!

  • This was delicious! Baking the potatoes must have intensified the flavor, as promised. Due the needs of a diabetic family member, I skipped the brown sugar and still loved how tasty and citrus-y it was. A definite repeat for next Thanksgiving!

  • For a large crowd I tripled the amount of sweet potatoes and orange peel, and doubled all the other ingredients. It was delicious!

  • Excellent - flavorful, easy, delicious, every single person loved it & had 2nds! As others suggested, used 1/2 sugar & less orange juice. Increased spices to our taste & omitted nutmeg. Used lime juice & zest instead of lemon.

  • This was fantastically easy and delicious. I used Hernandez sweet potatoes which are extremely sweet so I did not need all of the sugar, but if using another variety, I would still use the sugar. Will be making again soon!

  • This was the family favorite at our Thanksgiving dinner this year. I cut back a little on the sugar and orange juice, following the advice of some of the reviewers. We also added mini marshmallows over half the dish at the end to make the kids happy.
