Freezer Meals Are the Key to Weeknight Cooking

Ready tocook every meal at home for a whole month? You're going to need a Freezer Fix (and no, that doesn't mean ice cream).

I've been around the#cook90block enough times now that I know how it goes. Everything starts off rosy: you're cooking every meal, feeling healthy and self-sufficient and like you could do this for the rest of the year—no, for the rest of yourlife. Cooking is no. Big. Deal.

But just wait. Around day 6 or 7, things start to change. You'll get stuck at work late and resent the fact that you won't be done with dinner until 10pm. Youronline grocery orderwill be delayed and you'll be forced to makescrambled eggs(again). Or you just won't feel like cooking one day. Hey, it happens.

This is why I'm prescribing a Freezer Fix.

Now, it's no secret thatthe freezer is a dinnertime workhorse(or, as I prefer to think of it, a cool, stocky sous chef that never talks back). Cooking—and #cook90—is easier when your freezer's full of broth, nuts, grains (I keep all my grains in the freezer to keep them from going rancid), andfrozen fruits and vegetables.

From freezer to pita: a chicken patty's brave journey.

But keeping handy ingredients in the freezer is one thing; a Freezer Fix is a freezer meal that just needs to be thawed and put over some rice, or thrown into a pita. (I've said it before and I'll say it again: there's nothing—nothing!—that can't be put in a pita. Except another pita.)

My colleagues Anya and Rhoda talked about this the other day in theirSunday Stashcolumn. There, they tout the benefits of having these delicious littlemushroom-and-beef pattieson hand as a freezer meals for feeding kids. Seeing as how I can get as hangry as any 5-year-old, I'm applying the same concept to myself.

This recipeis loosely based on kofta,those delicious lamb (or beef) patties that are hawked by street vendors all over the Middle East and North Africa. I wanted a chicken version, and I wanted it packed with herbs. Plus a big handful of caramelized onions to keep the patties juicy. And reader? That's exactly what I got.

Put them over rice or greens (or both!) and top with a simple yogurt sauce. Slide a few frozen patties into a skillet of simmering, spiced tomato sauce and serve over toasted pita (the pita will soften—it's so good, trust me). Or crumble the pattiesintothe tomato sauce and you'll have something like a chicken ragu, ready to serve over pasta. Thanks to your freezer meals, you'll be far from hangry—at least for one more day.
