Escabeche Dressing

Ingredients

makes 1 cup

1/2 cup fresh lime juice
1/4 cup plus 2 tablespoons distilled white vinegar
1 tablespoon plus 1 teaspoon kosher salt
1 teaspoon sugar
2 tablespoons extra virgin olive oil
  1. Stir together the lime juice, vinegar, salt, and sugar in a small bowl until the salt and sugar dissolve. Whisk in the oil.
