Ingredients
Makes 7 servings
In a medium saucepan, combine milk, cream cheese, flour, salt, pepper, garlic powder and cayenne, if desired. Cook over medium-high heat, stirring, until mixture comes to a slow boil, 5 to 7 minutes. Remove pan from heat; stir in remaining cheeses and mustard until cheese melts. In a bowl, toss pasta with cauliflower; pour cheese mixture over top; stir. Divide pasta evenly among 7 bowls; serve immediately.

Back to TopI made the Cauliflower with Lemon Butter recipe from Epicurious. Then used it to make cauliflower pasta instead of using this recipe. Excellent. Used 1/2 olive oil and 1/2 butter for the lemon butter sauce. I cut the cauliflower into smaller pieces after roasting it, added the cauliflower to yellow onion and crimini mushrooms sauteed in olive oil, added pasta and the left over lemon sauce plus a little kosher salt and lemon pepper. Served the pasta with grated parmesan/romano cheese and toasted bread crumbs. It's easy and got rave reviews.

Tried this as a great way to get my kids to eat cauliflower - easy recipe, seems kid friendly but my 3 year old turned up his nose at the sauce despite loving mac & cheese. It's a quick family night dinner in a pinch, but with zero frills.

The flavors come together very nicely here. But trying to create a white sauce with cream cheese instead of butter was a very lumpy challenge.

Perfect for kids. Yummy. Short cuts... buy the shredded mixed mexican cheese.

Unfortunately, this recipe did not come out well for me. While the sauce was fairly good (though needed more seasoning), it all became very bland when I mixed the pasta, sauce, and cauliflower together. Plus the texture became a thick mass, which was not appetizing. I made this for a small Oscar gathering (we were having a vegetarian potluck) so I had to serve it to guests, even though I was not a fan of the final outcome. I think if I made this again, I would instead roast the cauliflower with some curry seasoning (I love a little curry spice in many dishes), make sure to salt the pasta water more while cooking, and make the sauce with more milk so that it doesn't become lumpy. It would no longer be a healthy recipe, but at least it would have more flavor.

My husband and I absolutely love this recipe! It's a great way to use cauliflower, which neither of us usually eat.
