Whole Grain Pancakes with Wild Blueberry-Maple Syrup

Using whole grain flour and wheat germ in these pancakes isn’t just a healthy gimmick that adds fiber and protein—it also adds a nutty flavor that tastes really, really good.

Ingredients

Makes 12

1 cup plus 2 tablespoons maple syrup
1 cup frozen wild blueberries
2 cups whole grain complete pancake and waffle mix (the Bon Appétit Test Kitchen used Kodiak Cakes brand)
2 cups buttermilk
6 tablespoons wheat germ
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
2 tablespoons (1/4 stick) butter
  1. Step 1

    Boil 1 cup syrup and blueberries in heavy medium saucepan until reduced to generous 1 cup, about 13 minutes. Cool to lukewarm.

    Step 2

    Meanwhile, combine pancake mix, next 4 ingredients and 2 tablespoons maple syrup in medium bowl and whisk to blend (batter will be thick).

    Step 3

    Melt 1 tablespoon butter on griddle or in 2 large nonstick skillets over medium heat. Drop batter by 1/4 cupfuls onto griddle or skillets and quickly spread with back of spoon into 3- to 4-inch rounds. Cook pancakes until brown and cooked through, about 2 minutes per side. Transfer to plates. Repeat with remaining butter and batter. Serve with syrup.

If you can't find whole-grain baking mix, substitute 2 cups whole wheat flour, 1 teaspoon baking soda, 1/2 teaspoon salt and 2 egg whites.

  • Usually not a pancake lover, but this whole-grain recipe is delicious. I used Kodiak Flapjack & Waffle mix, & the recipe cooked easily using stainless steel pan & butter (looked like the photo). Syrup was too sweet for us so next time will experiment with less syrup & lots more blueberries.

This mix was doctored up to change and/or enhance the flavor! ALL RECIPES are just guides, you should pretty much know what flavors you like, and whenever possible, you should taste test all new recipe's ingredients as you mix them! I usually make a recipe up as written, then if I don't like it, but think it has possibilities, I will rework it! Recipes are a good starting point, but not the final word.

  • OK so people are saying why a mix! because it is a recipe for SYRUP! not Pancakes! any kind is good it was just a suggestion! I personally LOVE Kodiac Cakes and have eaten them for years and love that this recipe suggested using those because they are good. think yes (look at the box it tells you they are think and also says a way to not make them so think!) OK everyone so stop the hate about the fact they suggest a pancake mix!

  • Overall I liked the pancakes. I will def tweak it a bit to my own taste. This batter was extremely thick. I just used the pancake ingredients provided by "test kitchen" at the bottom. Much thicker than I was expecting, hehe. I ended up adding some water to thin them out since I only bought enough buttermilk to make them. The syrup was awesome. I never thought that I could just make my own syrup in such a simple way. The more I transition to making everything myself the more I love finding simple solutions like this one for syrup.

  • Didn't make them; so sad to see a mix used on epicurious! I have a wonderful recipe that uses buttermilk,7-grain cereal, wheat flour (usually for hot cereal) and honey...it's not hard! if it were appropriate I'd share it right here!

  • My husband normally hates pancakes because he finds them bland and boring, but he loved these. We really like the texture the wheat germ adds and the crispy outside. Maybe these pancakes aren't for everyone's taste, but I didn't find any flaws in the recipe as a previous reviewer stated.I didn't feel like taking out my huge griddle so I just used a regular nonstick pan and had no problem with sticking.

  • This recipe is seriously flawed--since it has no oil or butter in the batter, these pankcakes stick to the pan, no matter what kind of pan you use, and no matter how much butter you put in the pan. If you don't have a griddle, don't even bother.

  • 我在搅拌机使面糊,添加了一个香蕉to it. I also added semi-sweet chocolate chips. For the syrup I used rainier cherries instead of blackberries. It was absolutely fantastic and I will definitely make it again. In the end, there was a hint of banana flavor and the cherries had a very strong maple flavor (and not much cherry flavor), so that the combination of everything went very well. Awesome recipe!

  • This was ok. The pancakes are a bit dense. The syrup was nice and, keeping in mind how healthy these are supposed to be as compared to the regular white pancakes, they are more then edible :)

  • i absolutely love this recipe! although i do not have a griddle so there were some challenges getting the same crispy outsides but overall there were only 2 not so crispy pancakes before i figured it out. i also left out 2 tbsp buttermilk and used about 2 tbsp orange juice instead for a little hint of orangey flavor and it was fantastic! it brought out even more flavor in the blueberry syrup. definitely a keeper.
