How to Grill Brussels Sprouts

Add summery charred flavor to these superstar veggies by grilling them.

These days Brussels sprouts have officially left their place in theicky food departmentand joined the hip, use-them-in-everything land of the superfoods. You see themshaved into salad,tossed with pancetta and glazed, andpickled into kimchi. But the best way to cook them? IMHO, it's grilled.

Of course, everyone has an opinion on justhowto grill Brussels sprouts. I've seen recipes that suggest tossing the mini cabbagesstraight on the grill(where I assume they'd just roll around free wheeling, like crazy veggie bowling balls!). There are recipes that call forBrussels sprouts on the stalk, using this firm stem as a built-in skewer to grill them. And other recipes that simply cook them in acast iron panor in afoil packon the grill. But if you want to give Brussels sprouts the smoky taste of the grill, it's all about the right technique. So the next time you have a bag of these cruciferous gems, here's how to grill Brussels sprouts:

1. Trim the Sprouts

To get the Brussels sprouts ready for the grill, use a paring knife to trim off the stem ends. Peel off any withered or yellowing outer leaves of the bulb.

2. Blanch or Steam

Because the Brussels sprouts won't fully cook in the time it takes to grill them, it's best to pre-cook them. Either steam or cook in boiling, salted water until they are just fork-tender, about 5 minutes.

3. Season

Drain the Brussels sprouts, then drizzle with oil and toss with salt, pepper and any spices you want to use. Onion powder, garlic powder, celery salt, and cayenne are all good options.

4. Skewer

5. Grill

Prepare a grill for medium-high heat (or heat a grill pan over medium-high). Place skewers on grill, cover, and cook 5 minutes. Turn skewers and continue to cook until Brussels sprouts are well charred and cooked through, about 5 minutes more.
