Amaranth "Risotto" With Mushrooms

No offense to traditional risotto lovers, but risotto made with amaranth is so much easier because it doesn't require 20 minutes of near-constant stirring. Just leave your amaranth to bubble slowly on the back of the stove, while you sauté our mushrooms for the buttery topping. Dried porcini mushrooms bump up the woodsy flavor of the topping, while their soaking liquid becomes a deep, mushroomy stock in which to cook the amaranth. This risotto is ideal for Meatless Mondays and will please all your vegan friends to boot, but if you are craving some cheese, 1/4 to 1/3 cup of Parmesan stirred into the risotto at the end will give it that extra boost that only Parmesan can deliver. Or keep it vegan and pass a bowl of grated cheese separately for those who want it.

Yam and Black Bean Burritos with Amaranth

It’s a wonderful fusion of one very Mexican ingredient, amaranth, with one very French dessert, macaroons. Be sure to let the raw macaroons rest after they are piped. This will dry out the tops and will result in a shinier and perfectly puffed macaroon.

Atole de Amaranto

Amaranth was a primary source of protein and an essential part of the diet for the pre-Hispanic population of Mesoamerica. It was often described as the “golden grain of the gods.” The seeds from the plant are considered one of the most nutritious grains and are a good substitute for wheat for those on a gluten-free diet. I like it simply for the flavor. I think it’s pretty awesome that the conquistadors forbade its cultivation because it was associated with human sacrifice, and yet, because of some “rebels” who valued the importance of their culture and traditions, it is still around thousands of years later. That surely should not go unnoticed! You can buy amaranth fl our and puffed amaranth in some health or specialty food shops and online (see Sources).

Amaranth Porridge with Fruit and Nuts

Try making a soothing bowl of cooked amaranth for breakfast. Enhance it with classic oatmeal toppings, from milk and fresh fruit to a pat of butter and a pinch of salt. Soak the amaranth in water overnight to cut the cooking time in half.

This simple quick bread is one of my favorites. It’s wholesome and subtly sweet. Whole-grain amaranth has a nutty flavor, adds great texture, and is packed with protein and fiber.

Amaranth Chili

The Aztecs worshipped the life-sustaining properties of amaranth in pre-Columbian times. Sadly, it all but disappeared after the arrival of the conquistadors. A grain (like wheat), amaranth is high in protein, fiber, and amino acids. In this recipe you’ll notice the silky beads add yet another exciting texture to this one-pot meal. I find amaranth in the bulk bins at the health food store. My food processor has a shredding disk, which works well for zucchini; however, sometimes I simply use my grating tower to get the same effect. The shredded zucchini gives this Glorious One-Pot Meal a thick, stewlike consistency that seems especially hearty. Feel free to swap the amaranth for the same amount of rice (the amount of liquid won’t change).

Amaranth-Walnut Cookies with Brandy

Everyone needs a real butter cookie once in a while. I certainly do. These cookies showcase the intense nuttiness of amaranth flour. Rolling them in minuscule amaranth seeds gives them a playful touch and adds a nice crunch, but they are also delicious without. Fine sea salt retains some of its crystalline texture during baking, adding sparks of salt to contrast the natural sweetness of the whole grain flours. For best outcome allow the dough to chill thorougly and firm up, ideally overnight. If the dough balls become soft while you finish them with the walnuts, as in step 4, chill the baking sheet with the cookies for 20 minutes before baking.
