These Super-Easy Halloween Cookies Are So Cute It's Scary

Looking for an adorable Halloween cookie? Keep it simple! There's no need to run out and search for cookie cutters and sparkly sugars for these "scream cheese" filled mummy sandwiches. These scary cute cookies can be whipped up using ingredients you probably already have on hand. And unlike most decorated cookies, these guys get their spooky faces from melted chocolate, so they taste as good as they look.

Some tips to help you along the way:

Make the cookie dough the night before

That way, when the mood strikes, all you have to do is slice, bake, and decorate. Alternately, this dough can be made up to 3 days ahead, wrapped tightly, and chilled (or frozen for up to 1 month).

Use paper-towel tubes to make perfectly shaped cookies

Save the cardboard tubes from two rolls of paper towels; cut lengthwise along one side. Form the dough into a log roughly the diameter of the cardboard roll and wrap in plastic wrap. Place the dough inside the tube, and roll on a surface to form a perfectly round dough inside the tube. Secure the ends with rubber bands, and refrigerate right in the tubes until firm (at least 2 hours).

Melt the chocolate gently over a barely simmering pot of water

Chocolate (especially white chocolate) can seize up if overheated. Make sure the water is just barely simmering and that the bottom of the bowl isnt touching the water. Stir often, and take the bowl off the heat when the chunks are almost melted. Stir gently to melt the remaining chocolate. Need to re-warm your chocolate? Not to worry, just return the bowl over the simmering pot and stir to re-melt.

Practice your piping before showtime

Arrange your cookies on a large piece of parchment paper. Fill a pastry bag with white chocolate to draw your mummy bandage lines. Practice drawing on the parchment first until you have a clean line (and no air pockets). Then drag the lines across the cookies.

Use gel paste food coloring for a brighter filling

We prefergel pastesover traditional food coloring because you can use much less and achieve a more vibrant sandwich filling.
