Brownies with Chocolate-Covered Raisins

Chocolate-covered raisins turn into fudgy pockets of intense chocolate and chewy raisins in these easy brownies.

Ingredients

Serves 12

3/4 cup ( 1 1/2 sticks) unsalted butter, cut into pieces
6 ounces semisweet chocolate, chopped
1 ounce unsweetened chocolate, chopped
3/4 cup sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup all purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup chocolate-covered raisins
  1. Step 1

    Preheat oven to 350°F. Butter 8-inch square pan with 2-inch-high sides. Stir butter and both chocolates in medium saucepan over low heat until melted. Remove from heat; cool to lukewarm.

    Step 2

    Using electric mixer, beat sugar and eggs in medium bowl until very thick and pale, about 3 minutes. Stir in melted chocolate mixture and vanilla. Mix flour, baking powder and salt in another medium bowl. Stir into chocolate mixture. Mix in chocolate-covered raisins.

    Step 3

    Pour batter into prepared pan. Bake until tester inserted into center comes out with a few moist crumbs attached and top cracks in places, about 30 minutes. Transfer to rack and cool in pan.(Can be made 1 day ahead. Cover with foil and let stand at room temperature.)

    Step 4

    Cut brownies into squares.

  • Really good! Would probably add another 1/2 cup of chocolate covered raisins to next batch. They stay a lot moister than the Triple Chocolate Brownie recipe on this site which used to be my favorite.

  • I am a huge fan of chocolate raisins and this recipe was very good, but not great. I think that a nice frosting or ganache topping would have made a big difference. Good choice if you're craving for a brownie.

  • Finally, a brownie recipe that doesn't call for nuts but a take off of the Chunky bar. The raisins were a welcome change. Will make again and again!

  • OHHHHH MY GOODNESS!!!!!!! These were the best brownies that I ever tasted! I brought them to work as a treat for the girls and they just couldnt keep their hands off of them! Nor could my hubby! The chocolate kind of melts off of the raisins a bit, and just makes the brownies taste like fudge!...definately not for the weak hearted! haha
