Country Ham with Redeye Gravy

The intense, salty, bitter flavor of redeye gravy can be polarizing. We've added butter and a pinch of sugar here to round out the flavors while still keeping the integrity of this iconic Southern condiment intact. Biscuits and/or grits are a great accompaniment to this dish.

Ingredients

Serves 2

6 ounces country ham, sliced 1/4-inch thick
1 tablespoon unsalted butter, plus more for ham if necessary
1/2 cup strong black coffee
1/2 cup low-sodium chicken broth or water
1/2 teaspoon sugar
  1. Step 1

    Heat a large skillet (preferably cast-iron) over medium-high. Cook ham, adding 1/2 Tbsp. butter if ham is lean to help the browning process, until browned and fat has rendered, 2–3 minutes per side. Transfer ham to a platter.

    Step 2

    Pour coffee into the same skillet and cook over medium-high heat, scraping skillet with a wooden spoon to deglaze and loosen any browned bits. Add broth and sugar; simmer, stirring occasionally, until thickened and reduced to about 1/4 cup, 3–4 minutes. Add 1 Tbsp. butter and whisk until emulsified, about 1 minute more. Pour gravy into a small bowl or serving vessel and serve drizzled over or alongside ham.

  • As a Southern California native who has always lived somewhere in the "West," I somehow made it to my 40s without ever having Redeye Gravy. What a pity, too, because it was DELICIOUS! (And so very easy). We served this for dinner with stuffing and a vegetable - great way to use leftover ham.

  • 从来没有在我55年左右吃国家的ham have I ever had red eye gravy with chicken broth. Sugar added can be white or brown. Coffee and sugar can be added either during or after cooking the ham. Maybe your recipe will taste okay, but I won't be trying it. I serve country ham at least 30 times per year in one fashion or another.
