Garlic Bread

The secret to garlic bread that's neither too greasy nor too dry is having the correct proportion of butter to bread, so we give specific dimensions for the Italian loaf. If yours is a different size, you'll need to adjust the amount of garlic butter accordingly.

Ingredients

Makes 4 to 6 servings

2 teaspoons finely chopped garlic
1/2 stick (1/4 cup) unsalted butter, softened
1 tablespoon extra-virgin olive oil
2 tablespoons finely chopped fresh flat-leaf parsley
1 (15- by 3 1/2-inch) loaf Italian bread
  1. Step 1

    Preheat oven to 350°F.

    Step 2

    肉和土豆泥大蒜的粘贴圆形1 /4 teaspoon salt using a heavy knife. Stir together butter, oil, and garlic paste in a bowl until smooth, then stir in parsley.

    Step 3

    Without cutting completely through bottom, cut bread diagonally into 1-inch-thick slices with a serrated knife, then spread garlic butter between slices.

    Step 4

    Wrap loaf in foil and bake in middle of oven 15 minutes. Open foil and bake 5 minutes more.

Cook's notes:

·Bread can be spread with garlic butter 8 hours ahead and chilled, wrapped in foil. Let stand at room temperature 30 minutes before baking.
·For a brighter flavor, you can substitute 1 tablespoon finely chopped fresh basil for 1 tablespoon of parsley.

  • As they say, you don't measure garlic with your head, you measure it with your heart. For my Italian heart, this takes several cloves of minced fresh garlic plus one roasted head of garlic mashed into the butter mixture. I make this every Christmas, and have made it for several large parties, as a side dish to lasagne, and it's always a huge hit.

  • Delicious recipe for using garlic and parsley from our garden. And it does ensure that you get enough butter but not too much. I did find it turned out better leaving it in the oven about 5 min. longer.

  • I tried this recipe today and it turned out to be amazing!!! The only add on I did was I used a bit more of garlic. It was super tasty and super super soft!!

  • After reading reviews, I made some modifications, and it came out great. I roasted a bulb of garlic in olive oil, pepper and salt wrapped tightly in foil for one hour at 350. I used that garlic, and added to the butter mixture. I added paprika, shredded parmesan, and some red chili flakes. Delicious!!

  • my first time making garlic bread, my mother-in-law liked it so I guess I will be making this again. But next time I'll double the amount of garlic since with the amount called for in this recipe I could barely taste the garlic.

  • I've been using this as my standard garlic bread recipe for a while now. I find it's easier to spread the butter and garlic mixture if you cut the entire baguette in half, instead of doing the little slices. Easier to make and it improves the texture.

  • Great. Measure the salt and the garlic. The proportion of bread to spread is important. I made it on an 8 inch loaf and it was too much garlic but would have been perfect on the 15" loaf.

  • This recipe was good, but not great. I felt like I could have doubled the garlic spread to better cover the bread slices. It just needed more flavor and substance.

  • This garlic bread has absolutely no garlic flavor. Instead of 2 tsp, may be I should have put in 2 tbsp of garlic. Very disappointing. The cook from Springfield MA is correct -- it's too bland.
