Pecan Praline Popcorn Treats

Though nuts plus popcorn is a classic, these treats are a far cry from Cracker Jack.

Ingredients

Makes 8 servings

1 3/4 cups sugar
5 tablespoons unsalted butter, cut into pieces
1/2 cup coarsely chopped pecans,toasted
1/2 teaspoon cider vinegar
8 cups plain popped popcorn
  1. Step 1

    Oil a 9-inch square baking pan.

    Step 2

    Heat sugar in a dry 4-to 5-quart wide heavy pot over medium heat, stirring with a fork to heat sugar evenly, until it starts to melt. Stop stirring and cook, swirling pot occasionally so sugar melts evenly, until it is a deep golden caramel. Reduce heat to low. Stir in butter, pecans, vinegar, and 1/4 teaspoon salt. When butter is almost melted, add popcorn and stir to coat.

    Step 3

    Quickly press mixture into baking pan with a spatula. Cool completely. Cut or break into pieces.

  • Quick and easy! Threw in some vanilla extract and ground cayenne pepper. Spread it out over parchment paper on a baking sheet and then broke it into bite-size pieces. Delicious!

  • 我很少一个配方如经上所记。I start tinkering with it right off. I made a double batch of this to take to work tomorrow. I like the whole salty/sweet experience so I doctored this a bit. I added my salt (kosher) at the end while I was mixing it the caramel into the popcorn. I also added cayenne at this point. In addition to toasted nuts I added a handful of cocoa nibs. The other reviewer is correct about it being very sticky and needing to work quickly at the end in the mixing stage. Be sure that you have all your ingredients close at hand! I would recommend having two long handled spatulas to mix the popcorn with. The caramel is dangerously hot and you have to work quickly. I haven't taken it out of the pyrex pan that I pressed it into yet. I suspect that it will not come out perfectly and look like a bunch of uniform rice crispy treats. If the squares idea doesn't hold together then I'll just crumble it and have Pecan sweet and salty caramel popcorn:)

  • I decided to whip this up because I made popcorn in a pan for the first time and didn't relize how much I was making. The sugar took a very long time to get to the melting stage. I had it more on med-high and it still took close to half and hour. Once all the ingredients are in and it's time for the popcorn, you have to work quick. It's very sticky. I'm nost sure how clean-up is going to be because I haven't got to that stage yet. It tastes great though.
