Welcome to Pasta Week

Five days of pasta intel you can really sink your teeth into (because it'sal dente).

When we first talked about dedicating a week at Epicurious to pasta (a Pasta Week, if you will), it seemed like a no-brainer. Ofcoursewe should do a series of stories celebrating pasta. After all, there's no other food we turn to as instinctively and automatically as those Italian noodles. Too tired to cook something fancy? Make some pasta. Need something to eat while watchingThe Voice? Make some pasta. Nothing in the fridge? Two words:pantry pasta.

But the more we thought about the stuff, the more we realized how deep our pasta habits really run. Sometimes we turn into pasta zombies, mindlessly making the same old sauce week after week. We had a hunch that even when it comes to something as easy as weeknight pasta, there's a lot to learn.

And learn we did. We learned how to make anamazingly delicious meat sauce—that tastes like it took all day to simmer—in just 15 minutes. We learned howone simple ingredientcan transform almost any plate of pasta. And we learned how to make a homemade pastawithout ever messing with dough.
