With the Spring Equinox coming at the end of this week, we're officially in the last week of winter. Maybe you're sick of roasting root vegetables and making stews, or maybe you want to hold on to the comforting flavors of the season a little longer? In most parts of the country though, fresh spring produce is still just a shimmering dream. So for now, we're sticking with pantry ingredients and winter vegetables to get quick and easy meals on the table that are hearty and warming enough to get us through the last cold week of winter.

Monday: Pasta

Parsley, sage, rosemary, and thyme go together just as well in this pasta dish as they do in that Simon & Garfunkle song. Serve with a hearty green salad for a simple vegetarian dinner.

Tuesday: Stew

A complete dinner comes together in 20 minutes and dirties just one pan when you roast romaine and chicken breasts together on a rimmed baking sheet.
