Frozen Watermelon Daiquiris

Strawberries and kiwi wedges are threaded onto lemongrass skewers for a fun garnish. To make the skewers, cut a four-inch piece from the tough end of a lemongrass stalk, then peel away the outer layers until only a 1/4-inch-diameter skewer remains. (Look for lemongrass in the produce section of some supermarkets and at Asian markets.)

Ingredients

Makes 4

4 strawberries, halved, plus 1/2 cup sliced strawberries
1 kiwi, peeled, cut into 8 wedges
4 4-inch-long lemongrass skewers
5 tablespoons light rum
3 tablespoons sour watermelon liqueur (such as Pucker)*
2 tablespoons sugar
2 tablespoons fresh lime juice
3 cups 3/4-inch cubes seedless watermelon, frozen at least 1 hour
  1. Step 1

    Thread strawberry halves and kiwi wedges alternately onto lemongrass skewers. Stir light rum, sour watermelon liqueur, sugar, and fresh lime juice in small bowl until sugar dissolves. Transfer mixture to blender. Add frozen watermelon cubes and 1/2 cup sliced strawberries. Blend mixture well; pour into Martini glasses. Garnish with lemongrass skewers.

    Step 2

    *Sour watermelon liqueur is available at some supermarkets and many liquor stores.

  • Didn't bother with the garnish, but otherwise followed as written. I thought the sour watermelon (which I was able to find at the big liquor store) would be artificial tasting, which it kind of is by itself but it doesn't spoil the drink. I cut up one watermelon and froze it in 2-drink portions.

  • This was really amazing. I couldn't find Watermelon Pucker at my local liquor store (small town!) so I used watermelon martini mix (non-alcoholic) and splashed in a bit more rum. Frozen watermelon makes this special! All my guests raved (even the beer-drinking men wanted one) and asked for seconds.
