Lemon Dijon Dressing

Toss this simple dressing through an easysummer salad.

Ingredients

4 servings

1 tablespoon diced shallot
2 teaspoons Dijon mustard
1 teaspoon honey
2 tablespoons olive oil
1 tablespoon red wine vinegar
Juice of 1 lemon
  1. Combine all the ingredients in a food processor, pulsing until the mixture is well combined.

Note

The remaining dressing can keep for up to a week in the fridge.

  • Needs work. Too much acid-would use either lemon or vinegar next time-not both. Did not have shallots so use crushed garlic (1 clove). Added more honey and salt and pepper.

  • This dressing is easy and yummy, it reminds me of the salad dressing they serve in France. It keeps well in the refrigerator for up to one week.
