Vegan Banana Ice Cream

Watching frozen bananas blend into ice cream seems like magic—no sugar or dairy required. For extra flavor, stir in (cooled) toasted chopped walnuts and dark chocolate chunks for a easy spin on Chunky Monkey ice cream.

Ingredients

4 large very ripe or frozen bananas
  1. Step 1

    If using fresh bananas, peel, then arrange in a single layer on a large plate or parchment-lined rimmed baking sheet. Freeze until firm, at least 2 hours or up to overnight.

    Step 2

    Purée frozen bananas in a food processor, scraping bowl as needed, until creamy, 6–8 minutes. Divide ice cream among serving bowls, or freeze in an airtight container at least 2 hours before scooping and serving.

  • 作为一个素食主义者,我只是说这是有原因的that many people inherently want to slap vegans. Doubt me? Read the recipe again. Sigh. Mash 2-3 very ripe bananas and add to a small saucepan with 3/4 cup brown sugar and 3 Tbsp water. Cook over medium heat, stirring frequently and reducing your banana mash. (This step infuses the dessert with flavor and eliminates water from the bananas, for a less icy result). Once the banana are reduced, process in food processor until very smooth. Mix with a 14 oz can of full fat coconut milk, 2 cups alternative milk (I like soy creamer for this), a pinch of salt, 2 tsp vanilla and 1/4 cup banana liqueur or rum (alcohol is optional, but it lowers the freezing temp of the dessert so it won’t get rock hard). Churn in your ice cream maker and while churning pray to the goddess Meridia that vegans will be less lazy in their cooking.

  • Looking forward to trying this the next time I have friends over! I always have a frozen bag of banana slices in my freezer to blend into smoothies because they add creaminess so I know this will be good. Peanut butter and dark chocolate pieces added in, yum!
