How to Cut Cabbage the Right Way

You're going to need to know how to cut cabbage if you're going to make coleslaw this summer. How to Shred Cabbage:

1. Wash the Cabbage and Remove the Outer Leaves

Run your head of cabbage under the kitchen tap, removing any dirt or grit by lightly scrubbing with your fingers or a cleaning brush. Remove the outer leaves of the head of cabbage, simply by pulling them off with your hands. Just remove the very outer leaves—the ones that are softer, more leafy, and easy to pull off. You just want the good, crunchy parts for your slaw, after all!

2. Quarter the Cabbage

Place the cabbage on a cutting board with the core side down. Slice the cabbage in half from top to bottom, straight through the core—you'll want to use the largest chef's knife you own. After you've halved the cabbage, place each cabbage half cut-side down on the cutting board and cut half in half again, vertically from the top through the core. Now, you have a quartered cabbage.

3. Remove the Core

Each of your four pieces of cabbage will have a bit of the core at the bottom. Place each quarter cut-side down on your cutting board and use your chef's knife to cut the off the bit of core at a slight angle. The core is tougher than the cabbage, so you'll be able to feel where it ends and make your cut accordingly. If you want to roast or grill pieces of cabbage, stop at this step and cook them! 4. Shred the Cabbage

Keeping your wedge of cabbage cut-side down, slice it along the horizontal edge into thin strips. (You can also cut the cabbage vertically if you'd like longer strands.) Repeat this with all four wedges until you have a pile of cabbage strands. At this point, if you want even smaller strands of cabbage, you can cut the strips in half horizontally.The layers of cabbage will naturally fall apart into thiner strands as you cut, but you can also use your hands to break them apart.
