What's for Dinner? Daylight Savings Time Edition

Because sometimes the hardest part of making dinner is deciding what to make.

Welcome to Daylight Savings Time, the first rock solid indication that one day winter will be forced to loose its Siberian death grip on the world. What are you doing with your extra hour offreedomsunlight every day? If you're anything like me, the answer is coming up with any excuse to stay outside as long as possible—a plan that admittedly keeps me out of the kitchen.

And yet: we all have to eat something. So here are some recipes you can knock out quickly when you realize it's getting late—and dinner hasn't even been started.

Monday: Salad

This textured main course salad would be great with leftover chicken from the weekend, or topped with a poached egg. Bonus: it will make a great lunch tomorrow, too.

Tuesday: Tacos

Quick steak tacos get topped with a radish salsa for spiceandcrunch.

Wednesday: Soup

This spring-y minestrone is even more appealing with the healthy/hearty addition of chicken meatballs.

Thursday: Chicken

Roast chicken with...olives? Believe it. This needs a bit of time in the oven, but prep is easy to throw together.

Friday: Noodles

This dish has it all: it's healthy, easy, flavor-packed, satisfying, and—as a bonus for those observing Lent—it features fish.
