Epi's New Recipes of the Week: Sweet, Sweet Sheet Pan Suppers

It's summer versus fall, and these recipes have definitely picked a side.

Since these are the weeks thatpit summer against fall, it's only fair to warn you: The recipes below definitely lean toward the latter.

It's not that the Epi Test Kitchen hates warm, lazy days on the beach or anything. In fact, these recipes have less to do with the weather and more to do with the fact that school has started, Summer Fridays have ended, and we could all use a fast weeknight dinner or two.

Or six. So here are a half-dozensheet pan suppers. As the name suggests, these dinners—2 chicken, 1 steak, 1 veg, 1 fish and 1 paella (!)— are low on stress and even lower on clean-up. But they're high in oh-my-gosh-how-did-you-make-that-can-I-have-some-more?

Now, it may be autumn (soon, anyway), but weekends are year-round. So while the above recipes are for Monday through Friday (the saltimbocca and paella probably for Friday, right? Date night, right? Romance in the air, love on the plate—right??), I'm ending this week's round-up with a recipe that's just for the weekend: Butter Mandu, which are just like regular Korean mandu dumplings, except with butter. Don't worry about the extra fat, and don't worry about the time it takes to shape these babies—it's the weekend! You've got room for both.
