It's the week ofThanksgiving, and whether you're hosting, traveling, or contributing to a holiday dinner, odds are you have enough to do without worrying about what to make for dinner every night before the big day. So do yourself a favor and keep things simple with quick and easy meals that make smart use of leftovers and don't require a lot of clean-up.

Monday: 3-Ingredient Pasta to the Rescue

Made with only orecchiette, sweet Italian sausage, and fennel, this super-easy pasta is a weeknight workhorse. Double the recipe: you're going to turn half of it into a soup for Wednesday's dinner. If your kids aren't into fennel, substitute a green vegetable they prefer: spinach, kale, cabbage, or broccoli all work well in this filling one-pot dish.

Tuesday: Clear Your Fridge

You'll be needing some fridge space for all those Turkey Day ingredients, so take this opportunity to clear yours out with thisingenious frittata.您可以使用几乎任何吃剩的蔬菜,有限公司oked grains, and cheese you have on hand to make it. Roasted cauliflower from the other night? Throw it in. Stewed white beans that you didn't finish? Add those too. The only foods you don't want to add: the pasta you set aside last night and anything you'll need for your frenzied Thanksgiving cookathon. Serve the frittata with a big salad of mixed greens and a few slices of hearty bread slathered with plenty of good butter.

Wednesday: Soothe With Soup

You have a ton to do tonight (pack, bake three pies, hide all the junk you've been storing in the guest room) so tonight's dinner needs to be extra easy—and extra comforting. Start by sautéing a few sliced cloves of garlic in olive oil over medium-low heat in a soup pot or Dutch oven. Add one 28-ounce can of whole tomatoes, crushing them with your hands as you throw them in the pot, 6 cups chicken broth, and one 19-ounce can of drained cannellini beans and bring to a boil. Lower to a simmer and cook for 15 minutes to let the flavors come together. Add 2-3 cups of leftover pasta, depending on how thick and chunky you like your soup. Simmer for 2-3 minutes to heat through and serve, topping each bowl with a drizzle of olive oil and plenty of grated Parmesan.
