Sweet Chile Dipping Sauce

Our food editors were evenly divided concerning which dipping sauce they preferred with theduck salad. Some liked thenuoc chambecause of the depth of flavor imparted by the fish sauce; others leaned toward the sweetness and heat of the chile sauce. Make one or both, depending on your taste.

Ingredients

Makes about 3/4 cup

1/4 cup water
1/4 cup sugar
1/2 cup rice vinegar (not seasoned)
3/4 teaspoon salt
1/2 teaspoonsambal oelek(chile garlic sauce) or 1/2 teaspoon dried hot red pepper flakes
  1. Bring water and sugar to a boil in a small saucepan over moderate heat, stirring until sugar is dissolved. Remove from heat and stir in rice vinegar, salt, and sambal oelek. Cool sauce, then chill, covered, at least 1 hour.

Cooks' note:

·Sauce can be chilled up to 3 days.

  • I completely spaced when I was making this, so I just mixed all the ingredients together and poured the resulting "dressing" over the duck salad. It was still delicious and complemented it perfectly.

  • I upped the salt to a whole teaspoon, the pepper flakes to a whole teaspoon, and reduced the vinegar to 1/3 cup. I used seasoned vinegar and it turned out perfect. I didn't use this as a dipping sauce, but rather a marinade for thinly sliced cucumbers. This cucumber salad was fantastic and several friends have asked for the recipe. Serve with a thai dish like chicken satay.
