Our food editors were evenly divided concerning which dipping sauce they preferred with theduck salad. Some liked thenuoc chambecause of the depth of flavor imparted by the fish sauce; others leaned toward the sweetness and heat of the chile sauce. Make one or both, depending on your taste.
Ingredients
Makes about 3/4 cup
Bring water and sugar to a boil in a small saucepan over moderate heat, stirring until sugar is dissolved. Remove from heat and stir in rice vinegar, salt, and sambal oelek. Cool sauce, then chill, covered, at least 1 hour.
·Sauce can be chilled up to 3 days.

I completely spaced when I was making this, so I just mixed all the ingredients together and poured the resulting "dressing" over the duck salad. It was still delicious and complemented it perfectly.

I upped the salt to a whole teaspoon, the pepper flakes to a whole teaspoon, and reduced the vinegar to 1/3 cup. I used seasoned vinegar and it turned out perfect. I didn't use this as a dipping sauce, but rather a marinade for thinly sliced cucumbers. This cucumber salad was fantastic and several friends have asked for the recipe. Serve with a thai dish like chicken satay.
