Tarragon Mayonnaise

Ingredients

Makes 1 1/2 cups
1 cup mayonnaise (regular or low-fat)
1/4 cup plain yogurt
4 green onions, chopped
1 tablespoon drained small capers
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh tarragon or 1 teaspoon dried
2 teaspoons Dijon mustard
2 teaspoons prepared white horseradish
  1. To make mayonnaise

    Combine all ingredients in bowl and mix well. Season with salt and pepper. (Can be made 1 day ahead. Cover; chill.)

  • Outstanding. I did make this twice. My first rating would be three forks but my second rating is four. I made this as prescribed the first time having halved it. The second go around is to reduce the horseradish in half but up the tarragon. Also, use fresh tarragon if possible and make this - if possible - the day before. The flavors need to blend. Use on chicken or poached salmon. Magnif!!

  • Really delicious sauce that went great with salmon burgers. Looking forward to trying it with other dishes or as a dip. I halved the recipe because I personally think it makes a lot of sauce and since it was my first time making it I wasn't sure what else I would use it for. After 4 salmon burgers we have plenty left for fish tacos or something else. I didn't add quite as much onion (because I didn't have enough and I'm not a huge green onion fan anyway) and added just a little more fresh tarragon, because I thought it needed it. Next time will try using sour cream instead of yogurt as mentioned by other reviewers.

  • Was missing a few ingredients (yogurt, capers and horseradish), but this mayo on top of the salmon burgers made it phenomenal!

  • Very fresh and refreshing; makes more than enough for the accompanying salmon burgers - leftovers were great on salmon salad sandwiches.

  • This is a delicious dip for chilled artichoke. I didn't add the yogurt, but instead increased the mayonnaise to 1/4 Cup. This is good for up to 2 weeks in the fridge

  • Less tarragon should be used. Its flavour becomes ovewhelming, even in small doses.

  • This mayonnaise is so flavorful that it would also be good on a steak sandwich, as it also goes well with fish and chicken. This is pretty much an all-purpose mayonnaise. I did substitue the yogurt for sour cream as I copycat from Iron Chef NY. I also added some chives in addition to the green onions. Excellent mayonnaise and/or tartar sauce.
