Avocado Egg-in-a-Hole

Avocado Egg-in-a-Hole Erin Gleeson

Ingredients

Makes 1 serving

1 avocado
1 egg, beaten
grated cheese
garlic powder
Salt and freshly ground black pepper
  1. Step 1

    Cut the avocado in half and remove the pit. Place the halves face up on a muffin tin so they won't tip over.

    Step 2

    Pour the beaten egg into each hole (one egg fills two halves). Sprinkle with grated cheese, garlic powder, salt, and pepper.

    Step 3

    Bake at 375° F for 15 to 20 minutes or until desired egg hardness.

Tip:

If the pit is small, scoop out a bit of avocado to make the hole deeper before adding the egg.

  • Scoop out some of the avocado to make room for a whole egg. These are freakin phenomenal.

  • This must require really large avocado and a very small egg to work! All the egg white ran off, leaving just the yolk. So I dumped out the eggs and took 2 halves of one avocados, scrambled an egg, and pour it into the two halves, sprinkled it with a bit of salt and pepper. Then did the same for the other avocado. It took 17 minutes @ 450 to get the whites to firm up. If you love avocados, this was very good. Needs bit of sauce or chives, or the suggested balsamic vinegar--Chimichuro sauce is our choice if you have it.

  • My husband and I thought this was an easy and tasty lunch. We perked it up with a splash of balsamic vinegar after serving and that made the dish more interesting. We will have this again.
