Big Bob Gibson's Bar-B-Q White Sauce

Ingredients

Makes 4 cups

2 cups mayonnaise
1 cup distilled white vinegar
1/2 cup apple juice
2 teaspoons prepared horseradish
2 teaspoons ground black pepper
2 teaspoons fresh lemon juice
1 teaspoon salt
1/2 teaspoon cayenne pepper
  1. In a large bowl, combine all the ingredients and blend well. Use as a marinade, baste, or dipping sauce. Store refrigerated in an airtight container for up to 2 weeks.

  • This is a simple recipe that tastes great. Agree with others not nearly the calories indicated per serving as it is a very thin sauce.

  • C'mon, guys: 2 C real mayo = 3200 cal; 1/2 C apple juice = 60 cal. You dip your smoked chicken in the white sauce, let it drain, and how much stays on the bird? Maybe a tablespoon?? A reasonable "portion" thus might be about 100 cal. That's not going to kill you.

  • These "per serving" numbers seem like guess-work. How DO you figure out a serving size for something like this? Even knowing that mayo has 10 grams of fat and 90 calories per tablespoon, it's diluted in this recipe by nearly equal parts of liquid (cider & vinegar) and other ingredients. Unless you're going to slurp it down like a bowl of soup (?) it's hard to project what a serving might be. But anyway, the LAST thing folks are doing when they're chowing down on barbecue is count the calories! Why spoil such a pleasurable experience?

  • This recipe sounds fabulous BUT after reading that "Per Serving": 500.0 calories, and 410 grams fat???? How can this be. Exactly what is "a serving" or is it a typo and those figures are for the whole "bowl" of sauce?
