Macadamia Nut "Ricotta"

Macadamia Nut "Ricotta" Michelle Tam & Henry Fong

Raise your hand if you miss cheese!

Ingredients

Makes 1 1/2 cups

2 cups raw macadamia nuts
1 teaspoon kosher salt
Juice from 1/2 medium lemon (about 1 tablespoon)
1/2 cup water
  1. DO THIS:

    Step 1

    In a food processor or a high powered blender, purée the ingredients together until smooth.

    Step 2

    If necessary, scrape down the sides with a spatula and/or add a bit more water. The resulting texture should resemble—you guessed it!—ricotta cheese.

  2. KA-POW!

    Step 3

    Amplify the color and flavor by mixing in 1/4 teaspoon of smoked paprika. Or add minced sundried tomatoes and fresh basil.

Cooks' Note

This "ricotta" will keep for up to a week in an airtight container in the fridge.

  • This is an incredible "ricotta" whether or not you're following a paleo lifestyle. Of course it isn't going to be the same as an actual ricotta, but guess what...it's pretty damn close! I get so frustrated with reviews like the first one that state it tastes like ground up nuts and water because it's so far from the truth. Sometimes it's good to broaden your horizons...aaahhhhem....Davey1107. Also, FYI, not all of us can eat dairy so we can't just "cheat" and have some regular ricotta. Please, do your research before you start spouting off about how macadamia nuts are far worse for you than cheese. Take a look at the research on what one of the most inflammatory foods/substances in the world is...yep, that's right...DAIRY! I love Michelle from Nom Nom Paleo and cannot recommend her books or recipes enough! Do yourself a favor and follow her blog if you haven't already!

  • Have not been big on nut "cheeses", partially because I avoid cashews (FODMAP). But this is amazing! I made half the recipe with some modifications. I agrees that as is, it's a bit lackluster, so I added a small amount (

  • You don't know what you are talking about. I have diabetes and high blood pressure and known of the medical profession have been able to keep it under control. I have been Paleo for only two months and decreased my medication (under doctor's supervision) already, without introducing exercise as yet!! This recipe is delicious considering the benefits to be had NOT having cheese and in particular LOW FAT cheese.

  • this made much more than 2 servings¿.more like 8 or 10. it IS rich, but a delicious alternative to cheese. I used roasted mac nuts and omitted the salt and it tasted great.

Save yourself the heart attack and enjoy some low fat ricotta. If you're annoyed to cheat on your paleo plan, take some comfort in the fact the US News and World Report rated the diet dead last in their list of best diets, with doctors and the medical community calling it dangerous due to it's tendency to raise hypertension and cause diabetes.
