How do you impart the most flavor in a boil without overcooking the shrimp? Ice! Adding 4 cups of ice cubes to the pot as soon as the shrimp are cooked through allows them to continue to absorb the flavors of the boil without getting tough. For a classic meal, pair with corn on the cob and boiled potatoes, or serve as a starter for a crowd.

Ingredients

Makes 4 servings

2 onions, halved crosswise
1 head of garlic, halved crosswise
5 whole cloves
3 bay leaves
2 tablespoons kosher salt
1 tablespoon coriander seeds
4 teaspoons yellow mustard seeds
2 teaspoons dill seeds
2 teaspoons whole allspice
1 teaspoon black peppercorns
1 teaspoon crushed red pepper flakes
1/2 teaspoon cayenne pepper
1 lemon, halved
5 dashes (or more) hot pepper sauce, preferably Crystal
1 1/2 pounds unpeeled large shrimp (about 30)
  1. Step 1

    Combine first 12 ingredients and 8 cups water in a large pot; bring to a boil. Reduce heat to medium and simmer 20 minutes. Squeeze in juice from lemon; add lemon to pot. Add hot sauce and shrimp. Simmer, stirring occasionally, until shrimp are just cooked through, about 3 minutes.

    Step 2

    Turn off heat, add 4 cups ice cubes, and steep for 5 minutes. Remove shrimp with a slotted spoon and place on a newspaper-lined baking sheet. Serve with additional hot sauce, if desired.

  • I just had to write a review, as I am puzzled by the negative ones. I thought this was a very good recipe and I loved the recommendation to put the ice in the pot...works like a charm.

  • I did devein the shrimp. And instead of water I used beer! This was the second time we did this Shrimp Boil. And beer is the way that I saw used in S.C. where my folks lived. It had much more flavor to it and the herbs and spices went real well with the beer. An a reason to get more beer because that is what you should drink at a shrimp boil! Just try not to over cook the shrimp! I dumped everything out on a news paper covered picnic table after draining off the beer and spices & herbs. I helped to cool things down and stopped the shrimp from overcooking. That's how they do it down south! Instead of napkins put out a roll of paper towels. And have lots of melted butter. It is that GOOD! We plan on doing a Shrimp Boil on our next camping trip up in Maine and hope to use all local and fresh stuff to make it.

  • Devein shrimp before cooking. The slit you make along the back to devein will also allow more spices to get under the shell.

  • With all the spices, I was sure this would be a tasty treat. However, the shrimp were bland and tasteless. I served the shrimp with cocktail sauce because I was so disappointed in the taste. I would not recommend this recipe.
