Shrimp with Tomatoes and Feta

Ingredients

6 servings

1/4 cup extra virgin olive oil
1/2 medium yellow onion, minced
2 1/2 cups Mutti® Finely Chopped Tomatoes “Polpa”
3/4 cup water
1/4 teaspoon dried oregano
Pinch of crushed red pepper
1 teaspoon red wine vinegar
2 pounds extra large shrimp, peeled and deveined
Salt and freshly ground black pepper
6 ounces feta cheese, crumbled
1 tablespoon chopped, fresh, flat-leaf parsley
  1. Step 1

    Warm the olive oil in a large frying pan over medium heat and cook onions, stirring occasionally until soft, 7 minutes. Increase the heat to high. Add the tomatoes, water, oregano, crushed red pepper and vinegar and stir well. Bring to a boil, reduce the heat to low and simmer until thick, 20 to 30 minutes.

    Step 2

    Add the shrimp to the sauce and stir together. Simmer until the shrimp are almost firm, 4 to 5 minutes. Season with salt and pepper. Crumble the feta onto the top and stir together.

    Step 3

    Garnish with parsley and serve.

  • This recipe is not bad but the times are inaccurate and as written bland. Onions took no more than five minutes and 20-30’ is way too long for sauce to thicken. I used a lot more Oregano, like 2-3 tsp, one tsp dried thyme and one bay leaf (later discarded). Other than these changes it is an easy and quick low calorie entree.
