The Most Royal of Icings

The only decorating icing you'll ever need.

Ingredients

Makes about 2 cups

3 1/2 cups powdered sugar
2 large egg whites
  1. Using an electric mixer on medium-high speed, beat 3 1/2 cups powdered sugar and 2 large egg whites until white, thickened, and tripled in volume, about 5 minutes. Add water by the tablespoonful until icing no longer holds a peak. Divide icing into smaller bowls and color with food coloring as desired.

  • A different way of making Royal Icing! Never tried adding water and this made the icing the perfect consistency for icing sugar cookies. Adding the food coloring gel was also very easy with the right consistency. Will use this again in the future! I would double the recipe if decorating more than a dozen cookies.

  • I used this recipe for brownies that I made, and everyone loved it! I thought it was delicious! Though, I didn't need as much powdered sugar as it called for in the recipe, because I didn't need that much. Super sweet, and super easy to make! Total win!

  • Worked like a charm. We used it to decorate sugar cookies. I followed the suggestions of adding water by teaspoon rather than tablespoon.

  • This icing worked really very nicely for cookies - it's very white and soft sets very quickly (the 2 hours in the recipe in the magazine seems like a very accurate estimate for hard set). I would recommend not adding water by the tablespoon, but by the teaspoon instead. One tablespoon wasn't quite enough, but two was too much. The first batch I made came out perfectly, but the second batch was too runny and I wasn't able to adequately re-thicken it (although that is likely due more to my inexperience than the recipe itself).

  • This was good for icing a gingerbread house. I was able to do really pretty decorations on my house even though I haven't done that kind of icing before. Instead of water, I added a few drops of lemon juice. I really liked that this doesn't require any cream of tartar as I didn't have it.
