Triple Smoke Burger

Anything grilled could be described as smoky, but our cover burger is a multi layered masterpiece thanks to chipotle chiles mingled withadobo, smoked paprika, and bacon. Seared avocado makes it almost too good to be true.

Ingredients

Makes 4 servings

1/2杯蛋黄酱
1 1/2 tablespoons Dijon mustard
2 tablespoons minced chipotle inadobo, including some sauce, divided
8 bacon slices
1 1/2 pounds ground beef chuck (not lean)
2 teaspoons sweet smoked paprika
1 large red onion, cut into 4 (1/2-inch) thick rounds, each stuck with a wooden pick to keep it together
1 firm-ripe avocado, quartered lengthwise, peeled, and cut lengthwise into 1/3-inch thick slices
Olive oil for brushing on onion and avocado
4 hamburger buns, grilled or toasted

Accompaniment:

lettuce; cilantro sprigs

  1. Step 1

    In a food processor or blender, purée mayonnaise, mustard, and 1 tablespoon chipotle; transfer to a bowl.

    Step 2

    Cook bacon in batches in a skillet over medium heat, turning occasionally, until crisp; transfer to paper towels to drain.

    Step 3

    Gently mix beef with 1 tablespoon chipotle, paprika, and 1 teaspoon salt until combined. Form into 4 (4-inch) patties.

    Step 4

    Prepare a grill for direct-heat cooking over medium-hot charcoal (medium heat for gas).

    Step 5

    Meanwhile, brush both sides of onion rounds and avocado slices with olive oil.

    Step 6

    Oil grill rack then grill onion rounds, turning over once, until slightly charred, 2 to 3 minutes total. Discard wooden picks.

    Step 7

    Grill avocado slices, turning once, until grill marks appear, about 30 seconds on each side.

    Step 8

    Grill patties, covered only if using a gas grill, until they reach 160°F on an instant-read thermometer, approximately 5 to 6 minutes on each side.

    Step 9

    Put sauce on buns and make burgers with lettuce, avocado, bacon, onion, and cilantro.

  • I was surprised I wasn't crazier about this, but probably because I made to many adjustments to the recipe. I was using this "single cow" burger, and didn't want to manipulate the meat too much, so used the chipotle and seasoning as a crust, and did it in a cast iron pan. The burger itself was delicious, but the accompaniments didn't work as well for me. One thing I will do again was the grilled avocado. Never done that before and it really saved the burger and is something I'll go back to. For me there just wasn't enough acid in the recipe. Though I love the taste of the tomatoes charred on their own, and the sweetness of grilled onion, there just wasn't enough acidity to balance the sweetness of the adobo sauce in the chipotle and richness of the bacon and avocado. I think it needs more fresh flavor and acidity than the cilantro could do on it's own and then would be fantastic. Just poorly balanced the way it's written here. The burger patty itself was delicious.

  • As I was putting this together, I started wondering why I was going to so much trouble for just a burger. That is-until I tasted it. I made the sauce a little ahead, and actually did the accompaniments and burgers all at the same time. It all worked, and was delicious, although the avocado probably could be left out.

  • It was ok but way to much effort and ingredients for a grilled burger. Simple has always been the best recipe for burgers on the grill. I tried, it just didn't work for our crowd on Memorial Day. I'll know better next time.

  • I liked a lot about this burger but another time I'd lose the avocado because the taste of it got lost in all the other flavours. It did have a nice smoly flavour to it and came out perfectly and juicy.

  • i enjoy just how this recipe looks i eaten it before with my children all of us enjoyed this we can have a family group gathering again and cook this recipe again soon that is one tasty recipe you should check it out i guarantee you all you could will require to this its very tasty

  • This is my all time favorite burger...made it just as the recipe calls for but added a thick slice of smoked Gouda a minute or so before taking the burgers off the grill...deliciously over the top good!

  • Superb. Not a huge fan of the grilled avocado, but excellent with raw avocado. Also do bacon sometimes, omit it sometimes. This is our favorite burger recipes!

  • Yum - it's gone into summer rotation! A couple tweaks that I found made this dish even better. To start, I found the burger mix dry and unbalanced. Overall, the dish seemed to be lacking sweetness. I added burger mix ingredients to Chipotle BBQ sauce (or regular sauce, 1 tbsp per burger), which I mixed right into the patty. I also added a ring of grilled pineapple to add a touch of sweet to balance the chipotle heat. Served open face on a ciabatta bun and used all ingredients to create an elegant and artistic stack effect with cilantro on top. Instead of bacon, I pan friend thin pancetta, which I think added to the taste and overall artistic look of the dish.

  • Overall, the burger was quite satisfying, although I found the chipotle sauce to be a little too spicy for my taste (or perhaps I put too much chipotle into the sauce?). Perhaps I'm more of a "savory burger" type of person, but I felt that the chipotle sauce drowned out the savoriness of the burger.

  • This may be one of the most flavorful, delicious burgers we've ever made! The chipotle in adobo and paprika in the burger meat added another dimension as did the cilantro. Definitely try this recipe!
