Watermelon Rum Mash

Watermelon Rum Mash Jim Bastardo

Drink up and get a healthy dose of cancer-fighting lycopene.

Ingredients

Makes 8 servings

6 fresh shiso (or mint) leaves, plus 8 additional sprigs for garnish
12 3/4 cups (2 3/4 quarts) cubed seedless watermelon, pureed and strained (makes 1 1/2 quarts juice)
1 2/3 cups white rum (or to taste)
  1. Crush shiso in the bottom of a large pitcher, using a long wooden spoon. Add watermelon juice and rum; stir. Serve over ice; garnish with shiso sprigs.

  • Watermelon juice on its own is a bit bland. I make this in smaller amounts with 1.5c watermelon juice 6 strawberries mint to taste. Rum to taste (about 2 oz.) Chop strawberries and mint, then add 1 thick slice watermelon in small mixing bowl. Use immersion blender for easy cleanup.

  • good idea, but MUCH better made with the Watermelon Ade recipe. Just use a bit less sugar (the rum is sweet), add crushed mint and rum. Enjoy!

  • I was really looking forward to mild and refreshing drink, but was pretty disappointed in what got. Especially after all the work of making my own watermelon juice! I can appreciate a subtlety flavored drink (that is actually what I was looking for) but this was almost tasteless. It was drinkable but definitely not anything I would ever choose to make again.
