You Only Need Three Ingredients to Make Amazing Grilled Chicken Wings

Your only challenge? Choosing between hot Buffalo, fragrant curry, spicy Korean, or savory garlic-herb.

Buffalo Sausage

Buffalo was (and still is) the primary game meat of the American Indians of the Southwest pueblos. They either hunted buffalo or, if they were an agrarian society like most pueblo tribes, they traded corn and other supplies for buffalo jerky and buffalo skins. Originally, there were over 60 million buffalo or bison roaming the continental United States from the Northwest all the way to Virginia. But by the 1920s, they were almost extinct from overhunting, with only 1,200 left. Fortunately, they have been brought back through effort and careful husbandry, and there are many suppliers of buffalo meat today. When planning my fall menus, I always include buffalo and pair it with local New Mexican fruits like our excellent apples from the Velarde Valley. Any high-quality buffalo sausage will work for this recipe, or substitute a game or lamb sausage.

Bison Reuben Sandwich

A trip to New York City wouldn’t be complete without stopping in a Jewish-style deli, and you can’t go to a New York deli without trying a Reuben sandwich piled sky-high with corned beef brisket, sauerkraut, Swiss cheese, and Russian or Thousand Island dressing. This is my southern take on that great sandwich. Lean bison is naturally lower in fat than beef, but its flavor is quite similar and you should feel free to use beef brisket if you can’t find or don’t care for bison. I often dress red cabbage as coleslaw for sandwiches, but cooking it first mellows its bitter note. Hundred Island Dressing is revamped from the original with a substitution of pickled okra for pickle relish. Okra reinforces the southern touch that’s also present in the barbecue sauce.

Tomato, Basil, and Buffalo Mozzarella Scramble

Made in summer at the height of tomato season, this scramble is wonderful with fresh mozzarella or burrata, a delicious, buttery-textured Italian cheese. It’s important not to overcook the tomatoes or the basil, which will keep its bright green color when added toward the end.

Portobello Buffalo Burgers with Celery Apple Slaw

More and more people are cooking with ground buffalo meat because it's lower in fat than beef chuck. That very asset can turn into a liability if the meat is cooked too long, so here, sautéed chopped portobello mushrooms contribute additional moistness and flavor. Don't reach for the ketchup: A crisp slaw of celery and apples in a mustardy dressing is a piquant surprise.

Buffalo Meatloaf with Spinach and Roasted Baby Potatoes

This is a complete meal—with a main course and two sides. Also called "American bison," buffalo tastes slightly sweeter than beef. It also has significantly less fat and cholesterol. You can find buffalo at specialty foods stores (such as Whole Foods), some farmers' markets, and online at dartagnan.com. If you can't find buffalo, use lean grass-fed beef.

Before you begin roasting your buffalo, roughly calculate the total roasting time: Plan on about 16 minutes per pound once the oven temperature is reduced to 350°F (20 minutes per pound for beef), but start checking the temperature of either type of roast about 30 minutes before you think it will be done. Active time: 40 min Start to finish: 5 1/4 hr (4 3/4 hr for beef)
