Epi's Newest Recipes: Put an Egg On It Edition

The egg trend is no longer a trend—it's a reality. And that's totally fine, because we've got egg-topped recipes for days.

Perhaps you thought that the trend of putting a fried egg on top of everything—from pizza to pie—was over. Well, kind of. Eggs are still being thrown on top of everything. But now it's not just fried eggs—it's boiled eggs, too.

Case in point: This egg curry. You'll be hearing more about this dish later this month, when everybody has a post-Easter glut of hard-boiled eggs. But I'm giving you a sneak peek now, because this recipe is too good to wait until the end of the month to make.

Boiled eggs—softer, this time—make an appearance in this sumo stew, which Epi's recipe master, Rhoda Boone, recently fell in love with at a Japanese restaurant. Her recreation of the traditional dish is topped not just with eggs but with all manner of delicious proteins. Sumo wrestlers don't get strong just by eating vegetables, you know?

On to poached eggs. In this recipe from our sister magBon Appetit, a soft, creamy poached egg gets set on top of a soft, creamy bowl of cheesy grits. Bacon and thinly-sliced red chile prevent the whole thing from becoming baby food.

Finally, a fried egg (you didn't think we were going to leave that out, did you?). Here it sits atop a pile of black rice and brocoli. And avocado. (In case you haven't heard, avocados are kind of trendy, too.)
