Beef Stew in the Crock Pot

Ingredients

Serves 6

2 pounds chuck meat, cut into 1 1/2-inch cubes
1/4 cup flour
2 tablespoons olive oil
1/2 cup red wine
1 cup beef stock
2 bay leaves
1 tablespoon fresh thyme, minced
2 potatoes, peeled and cubed into 1 inch pieces
2 stalks celery, sliced
2 carrots, peeled and sliced
1 large onion, chopped into cubes
2 garlic cloves, minced
1 1/2 teaspoon kosher salt
1 15 oz can unsalted diced tomatoes
  1. Step 1

    Place the cubed meat and flour and in Ziploc bag, seal and shake until the pieces are fully coated with flour.

    Step 2

    Heat 2 tbsp of olive oil in a large sauté pan over medium high heat and sear the pieces of meat for 4 minutes until all sides are nicely brown.

    Step 3

    Remove the meat from the pan and place in the crock pot.

    Step 4

    Add the red wine and stock to the sauté pan and bring to a boil for one minute, scraping off the bits of meat that have caramelized in the pan with a wooden spoon.

    Step 5

    Add the reduced liquid to the crock pot along with the remaining ingredients and combine.

    Step 6

    Cook on low for 6-8 hours.

  • I made this yesterday. A big hit with my family! I didn't have red wine. I'd like to try using it in the recipe next time I make this stew. I used 2 teaspoons of Better Than Bouillon Roast Beef Base & 2 cups of boiling water as my Beef Stock. I didn't have fresh Thyme. I used 3/4 teaspoon of ground Thyme. The only other ingredient I added was 1 Tablespoon of Worcestershire sauce. I pinned this recipe as I will make this again & again!

  • We loved this recipe, it’s perfectly basic. The recipe can be left as is or modified to suit the cooks taste. We also added mushrooms, green beans, fresh tomatoes, fresh herbs, and a few dashes of vermouth. When I make this for my grandmother I make the basic recipe. We love it both ways.

  • I added 2 cups beef broth, 2 tbsp. tomato paste, 1 tbsp Worcester sauce, let it cook for 8 hours on low, then mixed in 2 tbsp cornstarch & 2 tbsp diced parsley and let it go for another half hour on high. Served with more fresh parsley & bread. Nothing beats coming home to a big pot of beef stew on a cold, winter's day.

  • Good base recipe. I added fresh herbs-oregano and thyme; used more wine and reduced and also added 1/4 cup of red wine vinegar. General complaint with recipes on this site and in many cookbooks....It is odd that recipes supposedly written/prepared by professionals use the pattern of "2 carrots;" "1 large onion," etc. since there is such variation in what people perceive and what an actual measurement of an ingredient is. I like carrots-so I added a LOT of carrots for instance. Thanks for indulging in my rant and if you feel the same way let people that write these things know!

  • I use this basic recipe. I add more liquid and garlic. I also add worcestershire sauce to the process and serve over egg noodles.

  • I love this recipe. I did make slight adjustments. I added mushrooms, cooked on high for 6 hours in the slow cooker, then transferred to the stove top and cooked down for another hour, adding tomato paste to thicken, for a thicker, heartier stew. My toddlers even like it!

  • Cooked the beef stew in a 10qt. Pressure cooker for 25 min. I added mushrooms along with a green bell pepper. Turned out fantastic. Will use this recipe again and again

  • Found this recipe a few months back. It is simply the best stew I've ever had. I add pearl onions, leave the skin on red potatoes, add baby carrots, and celery salt rather than using fresh celery as my fam doesn't really like celery much. I make this one at least monthly.

  • As a new mom, this is my go-to crockpot recipe we use once a week. I literally have zero time when I walk in the door at night to start our dinner and night time routine, so it doesn't matter how "easy" a recipe is, I can't do it unless it is in a crockpot that I set up the night before once baby went to sleep and can cook all day while I'm at work without drying out. This one fits the bill and I really wish there were more like this! We omit the salt during cooking so that we can share with our baby now that she is on solids. She loves the beef and the carrots, and they are so soft that she doesn't need them pureed. We add salt to our own plates because it does need salt. Please do more recipes like this!!!
