Blondie Muffins

Ingredients

Makes 12 mini muffins (3 per serving)

Coconut oil spray
1 (15-ounce) can chickpeas, drained and rinsed
1/2 cup unsweetened almond butter
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup maple syrup
2 teaspoons vanilla
  1. Step 1

    Preheat the oven to 350°F.

    Step 2

    Prepare a mini muffin tin by coating it with the coconut oil spray.

    Step 3

    Puree all the ingredients in a food processor or a blender, then pour the batter into the prepared tin.

    Step 4

    Bake the muffins for 18 to 20 minutes, or until a toothpick comes out clean.

  • These high protein muffins are the perfect quick and filling snack for my young adult child that is an ultra runner. I substituted peanut butter and added mini chocolate chips. I get 24 muffins out of the recipe.

  • I'm new to being vegan. My husband wanted banana bread, I wanted something quicker. These worked out deliciously! I actually got 16 muffins with my mini pan. I used to have friends over for coffee break and am looking forward to sharing with them. No apologizing for my new food chuices!

  • These are a great option for a protein-packed snack. Don’t expect a “real” muffin - I added cinnamon and ginger powder, and served them with low-sugar jam to my teens. They actually asked for more
