Easy Pad Thai

I'm probably not supposed to play favorites, but this recipe isdefinitelymy favorite. Pad thai is the epitome of simple ingredients creating dazzling flavor. It's fresh, light, exotic, and faster than any takeout (unless, of course, you happen to live above a restaurant that delivers). Fresh lime is key to creating the unique flavor, but one lime should be enough for a single or even double batch of this noodle dish. Fish sauce, which you can find in the Asian section of most major grocery stores or at Asian markets, gives this pasta a more authentic flavor, but if you can't find any, skip it; this dish will still rock your world.

Ingredients

Serves 4

8 ounces pad thai or lo mein noodles
2 tablespoons vegetable oil
1 clove garlic, minced
2 large eggs
1 1/2 tablespoons soy sauce
2 tablespoons fresh lime juice (from about 1 medium lime)
2 tablespoons brown sugar
1 teaspoon fish sauce
1/8 teaspoon red pepper flakes
3 green onions, sliced
1/4 bunch fresh cilantro, leaves only, roughly chopped
1/4 cup chopped, unsalted peanuts
  1. Step 1

    Bring a large pot of water to a rolling boil. Add the noodles and cook for 7 to 10 minutes or until tender. Drain the noodles and set aside.

    Step 2

    In a large skillet, heat the vegetable oil over medium heat. Add the garlic and cook for 1 to 2 minutes, or until tender.

    Step 3

    Whisk the eggs lightly with a fork. Pour them into the skillet and cook just until they solidify, but are still moist, moving the eggs around the skillet slightly as they cook so that they lightly scramble. When the eggs are cooked, remove the skillet from the heat and set aside.

    Step 4

    In a small bowl, stir together the soy sauce, lime juice, sugar, fish sauce, and red pepper flakes. Pour the sauce into the skillet with the scrambled eggs. Add the noodles and toss to coat in the sauce.

    Step 5

    Sprinkle the green onions, cilantro, and peanuts over the noodles. Toss lightly to combine. Serve warm.

    Pad thai noodles have a unique flavor and texture, but if you can't find them in your area, try substituting another flat pasta like linguine.

Chef's Tip:

To get the most juice from your lime, roll it on your countertop while applying pressure before cutting it open. This causes the juice capsules to burst and release more juice.

  • This recipe was very dry, I had to add a lot of ingredients to actually make it good. It was a good learning experience, but I will definitely not be using this recipe again!

  • Just made a terrific pad thai last night using the same 8 oz of noodles but 4 cloves of garlic and about 3 T of fish sauce. This recipe needs more garlic and fish sauce, ooh, and it needs tamarind paste!

  • This is AMAZING! My brother and his girlfriend made it for us last night and I ate so (too) much. So flavorful! I don't even like cilantro that much but I enjoyed it with it added. We also added chicken. I will be making again SOON!

  • 绝对可怕。我唯一想对那些enjoy this recipe is they've never eaten real pad thai. Save yourself and find a better recipe that use tamarind. They need to change the name of this recipe to noodles and fish sauce because that's all it taste like.

  • While this was easy to make, I agree with other reviews that this was a dry dish. I added roasted chicken slices and bean sprouts that I normally see in restaurants. Does anyone have any suggestions on how to make it less dry without having the fish sauce taste take over the dish?

  • Love this recipe, I ended up doubling it because it seems like the portions in the original recipe are very small. Next time I think I'll make a bit more sauce because it seemed a bit dry this time. Overall very good though and I'll definitely be making it again

  • The flavor was quite good but overall it was very very dry. I think if I were to make this again, I would work on how to moisten it up. I included some chopped up grilled chicken I had left over as well, it worked out well. Also, it would taste much better with more heat, though my kids would disagree.

  • Any thick noodles will work with this recipe. I stir-fried some chicken strips and added them to the dish. Very delicious and yes, easy!

  • Its a good start. Needs more heat and I added some cooked chicken. Will try a tsp of peanut butter in sauce and some cayenne next time.

  • Great and easy recipe. Would def make this again. Was a tad spicy I'm guessing from the red pepper flakes so next time I will either skip or sprinkle a few and that's it. I did taste the fish sauce so I will prob 1/2 that next time as well. Either way, it tasted great and was the easiest recipe I have ever made!

  • This is the best thing I have ever made in my entire life so far. To be fair, I do tend to like slightly blander foods. I used lemon juice instead of lime and still liked it a lot. A lot of the sauce gets absorbed by the cooked egg, so maybe consider reserving some to toss just with the noodles. The serving size is way off. I'm a relatively light eater but finished this meal by myself as one dinner and one lunch.

  • I love to cook and absolutely love thai food, but it is a joke to call this recipe Pad Thai. I quadrupled the sauce upon prior recommendations and added sauteed chicken and veggies. The sauce comes out tasting very much like fish sauce.
