Milk Chocolate Pudding

Ingredients

Makes 4 to 6 servings

2 tablespoons sugar
2 tablespoons cornstarch
2 tablespoons unsweetened cocoa powder
1 1/2 cups whole milk
1/2 cup heavy cream
4 ounces fine-quality milk chocolate, chopped
1 teaspoon pure vanilla extract

Accompaniment:

lightly sweetened whipped cream
  1. Step 1

    Whisk together sugar, cornstarch, cocoa powder, and a pinch of salt in a 2-quart heavy saucepan, then gradually whisk in milk and cream. Bring to a boil over moderately high heat, whisking constantly, then boil, whisking, 2 minutes. (Mixture will be thick.) Remove from heat. Whisk in chocolate and vanilla until smooth.

    Step 2

    Transfer to a bowl and chill pudding, its surface covered with wax paper (to prevent a skin from forming), until cold, at least 2 hours.

Cooks' note:

  • I made this for my kids today to lift their spirits. It was so simple to make. I'm definitely adding this to my weekday arsenal. I stuck with the milk chocolate for my kids, but I'd love to use bittersweet chocolate for my husband and myself. SO GOOD!

  • Delicious and easy! Super fast to make, it really comes together when you whisk in the chocolate, turning thick and glossy. I used dark chocolate instead of milk, I think any combination of dark, milk or whatever would work, but It does show off the flavor of a good quality chocolate really well. Will be making this again...and again....

  • I added two additional tablespoons of sugar -- a good tip if you want a softer chocolate taste. The creamy mouthfeel of the pudding is very comforting on a brisk, autumn day.

  • Simple, easy, and delicious recipe. I substituted organic 2% milk instead of whole milk. I also substituted five ounces of semi sweet chocolate chips instead of chocolate bar. Would definitely make it again.

  • Found this recipe looking for something quick and homey that I could put together quickly. This hits the mark. I used good quality dark chocolate instead of milk and added a 1/2 teaspoon of instant espresso powder for depth of flavor. Fantastically deep dark chocolate flavor. If you thought that boxed instant pudding was good...try this. You'll be converted. I'm going to serve tonight with whipped cream and add a swirl of homemade caramel sauce.

  • Easy to make and definitely will again. As many have said it seems to be pretty flexible re: the milk/cream ratio. I used all whole milk and it's delicious. I used semi-sweet chips and found that perfect. For me using milk chocolate would be too sweet in this.

  • Nice, thick pudding, very chocolately taste. Very easy. Loved it with the whipped cream. Used semisweet chocolate chips, no chopping, melted just fine. Have all necessary items ready at hand, as one reviewer noted, you need it ASAP.

  • Very Good. I was inspired to try making pudding from scratch after ordering it at a local farm to table restaurant in the area. It was really neat watching it thicken as it boiled. Tastes great.

  • This was exactly what I needed to fix that Chocolate craving. I omitted the Heavy Cream and increased the whole milk. I only did this because it didnt have the cream. I also preheated the milk in the microwave and then slowly added it to the dry incredients. No lumps. I also did not wait for it to cool. I enjoyed the pudding as soon as I pulled it off the fire. YUM

  • I didn't think the pudding was that great. I did use lo-fat milk but the rest was according to the recipe. I also found it too sweet. Maybe omitting the sugar would help.
