Before you convince yourself there's no way that a little onion, tomato paste, and cream can come together in mere minutes to make one of the best homemade pasta sauces you've ever had, hear us out. Better yet, make this recipe for yourself. Just try and use double-concentrated tomato paste, which packs more flavor than the standard stuff.

Bring a large pot of salted water to a boil.

Meanwhile, heat 2 Tbsp. oil in a large Dutch oven or other heavy pot over medium. Cook onion and garlic, stirring constantly, just until onion is starting to brown around the edges, 5–7 minutes. Add tomato paste and red pepper flakes and stir to coat onion. Cook, stirring often, until paste is deep red and starting to brown and stick to the bottom of pot, 5–7 minutes. Add vodka, scraping up brown bits; reduce heat to low.
Step 3
Using a heatproof measuring glass, scoop out about ¼ cup boiling water from pot and add heavy cream. Stirring constantly, gradually pour cream mixture into onion mixture and cook, stirring, until a smooth sauce forms. Remove from heat.
Step 4

Step 5
Return Dutch oven to low heat. Using a slotted spoon, transfer pasta to Dutch oven. Stir in ½ cup pasta cooking liquid, then gradually add half of Parmesan, stirring constantly to melt. Pasta should be coated with a smooth, glossy sauce. Season with salt; add more pasta cooking liquid if sauce is too thick.
Step 6
Divide pasta among bowls. Top with basil and remaining Parmesan and drizzle with a little oil.

I never really got the point of vodka sauce before. Any time I ordered it in a restaurant it just seemed rather bland. Until I made this, and I only used a few flakes of red pepper. Also added a diced zucchini with the onion and garlic (used garlic chives from the garden). Only had canned tomato paste and used all 5.5 oz. Threw in about 2 Tb sliced oil preserved basil from the freezer and Kraft grated Parmesan cheese. Also used penne rigate because that’s what I had. The flavour was subtle at first but full of umami as it cooled. Did not use any cooking water and the sauce was just the right consistency. Even reheated for lunch it was good. This will go in our regular meatless Monday rotation.

easy pasta dinner, very tasty, as my 21 month old, too inhaled 2.5 of his bowls of this. I used a can crushed tomatoes instead of puree, and hubby and baby loved it. was a little confused with the boiling pasta water directions, but sorted it out eventually

this is... so good. and so easy. love the kick of spice, and the onions add a nice texture. i am quar cooking and admittedly did not have cream. had to substitute for some yogurt and milk and butter and even with this bastardization it was still awesome

This recipe is very simple and tasty. For me personally it was a little bland, but easily rectified with additional chili flakes. I served it with chicken sausage and garlic bread.

So tasty!!!! Also pretty forgiving- I threw in assorted chopped onion remnants (who used my last onion???) and only had tortellini for noodles, but it was still very tasty and quick to make.

Made this recipe again (it's one of my 11-year-old's favorites) the night before last as part of Covid-19 sheltering-in-place and it was extremely heartening! Only a "pantry staple" recipe if you normally keep heavy cream around (which I don't) but definitely an "I only had time to stop at the deli, not the supermarket" recipe, and easy. I used dried basil, which didn't do much, but the recipe is lovely even without basil.
