Even when you're eating alone, succulent, sliced Americana can be yours any night of the week—enhanced by a flavorful blue-cheese riff on creamed spinach.

Ingredients

1 (1-inch-thick) boneless beef top loin (strip) steak (1/2 pound)
1 teaspoon olive oil
1 teaspoon unsalted butter
1 small shallot, thinly sliced
1/4 cup heavy cream
1 tablespoon Saga Blue cheese
5 ounces baby spinach (10 cups)
1 1/2 teaspoon fresh lemon juice
  1. Step 1

    Pat steak dry and sprinkle all over with a scant 1/2 tsp salt and 1/4 tsp pepper.

    Step 2

    Heat oil and butter in a 10-inch heavy skillet over medium heat until foam subsides, then cook steak, turning once, until well browned, 7 to 10 minutes total for medium-rare. Transfer to a cutting board and let stand, uncovered, 10 minutes.

    Step 3

    Add shallot to skillet and cook, stirring, until softened, about 3 minutes. Add cream, blue cheese, and spinach and cook, scraping up brown bits from bottom of skillet and turning spinach with tongs, until spinach is wilted, about 2 minutes.

    Step 4

    Stir in lemon juice and salt and pepper to taste. Thinly slice steak and serve with spinach.

  • The flavors are amazing in this. But I agree with previous reviewers that there's far too much liquid in the end product (I boiled it down, but that results in a very mushy spinach). Next time I would only use 1-2 Tbs cream, max, for each 5 oz of spinach. The lemon and shallot really make the spinach special, and the cooking time on the steak is perfect.

  • This was so amazing that I am cooking this a third time tonight. The second time I made it for my adult son. He doesn't like Blue Cheese, but loved this meal.

  • Thanks, Ian, for the FABULOUS recipe. My boyfriend loved this meal so much that I made it two nights in a row! I used a cooking onion and omitted the blue cheese, and the meal was still delicious. I plan to make this meal on a regular basis!

  • Really yummy. The only things I did differently was that I used leeks instead of shallots (because I had a lot of leeks) and added some mushrooms to the spinach. It took all of 20 minutes to cook and that included cooking a packaged risotto to go with it. Definitely a great work day dinner.

  • This is definitely a keeper. Twenty minutes from the time I walked in the kitchen to the time I set the plates down on the table. Doubled the meat for me and my husband but kept all other ingredients the same. Really good!

  • Really great, EASY recipe, spinach has a lot of flavor and tang. Easy to double or triple the recipe. I was not careful with measurements, just dumped in approximate amounts. Made it twice this way, perfect both times, very forgiving.

  • I found this recipe looking to use some spinach I had in the fridge and it was great. I used no cream and added blue cheese to taste and it came out really well. Also the 20 minute preparation time is no lie!

  • I made this tonight for two of us. The spinach is amazing - I doubled everything, but would use a bit less cream next time, just to save a few hundred calories. That said, I wouldn't skimp on the cheese. Did I mention the spinach is divine?!

  • Outstanding recipe. It has a great blend of ingredients and it was really simple to make. It is written up for a single person dinner, but with a large enough skillet you can easily accommodate 4 or more doing 2 at a time... The steak came out perfectly.

  • 米y husband is not a fan of the ingredients individually however he LOVED this! I actually heard nothing but how good dinner was the rest of the night.. I used half n half in place of the heavy cream and just eyeballed how much i used, it was delicious! I will be making this on a regular basis
