Thyme syrup adds a savory note to this rum-cider punch that'd be great as a pre–holiday dinner drink.

Ingredients

Makes 8 servings

Thyme syrup:

1/3 cup sugar
8 sprigs thyme

Assembly:

2 cups apple cider
1 1/2 cups dark rum
3/4 cup fresh lime juice
1 teaspoon Angostura bitters
Club soda
8 sprigs thyme
8 lime slices
  1. For thyme syrup:

    Step 1

    Bring sugar and 1/3 cup water to a boil in a small saucepan, stirring to dissolve sugar. Remove from heat, add thyme sprigs, and cover. Let stand 10 minutes, then strain into a small jar. Let cool.

    Step 2

    DO AHEAD:Syrup can be made 1 month ahead. Cover and chill.

  2. For assembly:

    Step 3

    Mix thyme syrup, cider, rum, lime juice, and bitters in a pitcher. Divide among rocks glasses filled with ice; top off with club soda. Garnish with thyme sprigs and lime slices.

    Step 4

    DO AHEAD:Thyme syrup, cider, rum, lime juice, and bitters can be mixed 4 hours ahead. Cover and chill.

  • This is a delicious fall cocktail. The combination of soothing rum & cider, sweet thyme syrup and tangy lime juice works well. I've made this previously for Thanksgiving cocktails and plan to do it again this year. Make the thyme simple syrup 3-4 weeks ahead of time and the drink a day or two ahead of time. Easy, delicious and festive!

  • Thanks to the Dlaviano for providing the per drink measurements. I made two of these for a guest. The first was exactly as Dlaviano said, the second I upped the thyme syrup to a full ounce. In general it is good, but I am picking up lime more than anything else. Time to play with ratios a bit:-) The thyme syrup is divine and I can't wait to try it on other things. Maybe a drizzle over prosciutto wrapped melon.

  • Wow, wasn't prepared for how good this was. Served it last year at Thanksgiving, and most people declined when they heard it was a rum drink. But then one person tasted it and it caught on like wildfire. Everyone had at least one and I ran out! Making a double batch for this year's Thanksgiving, as it's my Thanksgiving signature drink now.

  • This is AMAZING. I made it for a church gathering for 12th Night/3 Kings. Absolutely delicious. Did in a punch bowl and added just-frozen fresh pineapple chunks instead of ice. Oh my goodness it was good!

  • 这是一个在感恩节,我从一个old fashioned glass punch bowl and little glasses to try to moderate consumption, but it still went fast :) Mine was much darker than the photo, not sure why, but still good. So glad that thyme grows right through the winter, fresn thyme is so flavorful and aromatic.

  • As you suggested I had a "house cocktail" for my Thanksgiving meal, this one. Served it in small glasses with a thin slice of lime and a small sprig of thyme. Pretty, refreshing and uniformly popular even for the less adventurous.

  • The New England Express. I was not paying attention when I grabbed a bottle of Ron Miel Dark Honey Rum. Bonus, I think Ron Miel made the drink. It is lighter and has a lower alcohol content than traditional dark rum, making it even better for a gathering where guests are pouring their own.

  • Brought this to my folk's house for Thanksgiving and everyone loved it. Not too sweet or boozy. But refreshing in an autumnal way. Curious how it would taste with bourbon. Easy enough to make a single serving too: just change the recipe from cups to ounces for rum, cider and lime juice, use 2/3 an ounce of syrup then add two drops of the bitters.
