Growing up in the Midwest (Wisconsin, for me specifically) the only thing that was guaranteed to be on your Thanksgiving table was a relish plate with a giant pile of black olives. A couple things make a Midwestern Thanksgiving: Midwestern cranberries (Wisconsin is the top producer in the country), and plain, old fashioned stuffing. No cornbread, no sausage, no oysters, just bread and seasonings. The turkey is a nod to the region's plentiful apple orchards.
